Mix Baking Soda with soy sauce, Worcestershire sauce, or balsamic vinegar, and fresh garlic to build into a wave of savoriness, tempered by a flash of acid. Prick the meat with a fork to let the marinade sink in.

Don't use soy sauce, IMO, unless you want Moobs. Soy increases estrogen production in men.

Thanks did not know that. Too late for me. Only time I use Soy is those packets with Chinese food. Hope it works with A1 what I got.

That process is called "velveting". Works great for stirfry.
