Sauce...
1/2 cup corn starch
1/4 cup water
1 and 1/2 tsp minced garlic
1 and 1/2 tsp minced ginger
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup cooking wine
1 and 1/2 cup hot chicken broth
Meat...
3 lbs chicken meat cut into pieces (I usually just use chicken breast but you can use whatever you have and cut into chunks)
1/4 cup soy sauce
1 tsp white pepper
1 egg
1 cup corn starch
vegetable oil
Finishing Ingredients...
2 cups sliced green onions
16 small dried hot peppers (you can adjust this however you wish)
1. First up make the sauce from the sauce ingredients listed above. Start first by mixing the corn starch with water and add the rest of the sauce ingredients and stir until the sugar dissolves. Refrigerate for later.
2. Mix all of the chicken ingredients together with the exception of the vegetable oil until everything is evenly coated. Add some vegetable oil to help separate the ingredients then deep fry @ 350 degrees until crispy. Place the pieces on something to drain off excess oil.
3. Stir fry the onions and peppers in a tiny bit of oil then add the refrigerated sauce. Next add fried chicken and cook until sauce thickens.
Enjoy!
