I created this recipe for my niece, who still makes me make this for her ever so often.
Ingredients
2 pounds ground beef or turkey
2 packs McCormick Burrito Seasoning Mix
2 cans refried beans
2 cups water
1 pack flour tortillas
Salsa
Guacamole
Monterey Jack Cheese
Sour cream
First brown and drain ground beef or turkey and drain off excess fat. Then mix in the 2 packs of McCormick Burrito Seasoning Mix, 2 cups of water, and 2 cans refried beans. Mix thoroughly and bring to a boil. Then reduce heat and simmer for 10 minutes. Set aside.
Next, coat bottom of lasagna pan with thin layer of salsa. Add a layer of tortillas cut to fit pan. Next add layer of cooked burrito mix, then salsa, then guacamole, and finally monterey jack cheese. Add another layer of tortillas cut to fit pan. Then add the same layers again (meat mixture, salsa, guacamole, and cheese). Add another layer of tortilla shells cut to fit pan. Finally, spread meat mixture and monterey jack cheese. Cover with foil (make sure to either tent foil or spray with non-stick cooking spray so cheese won't stick to foil) and bake at 350 degrees for 30 minutes. Finish off on plate with a spoonful of sour cream.
