oldmandawg's Pork Loin Chili

Ingredients

8 Tbs Vegetable Oil
3 Lbs Boneless pork loin, cut into 2-inch cubes ( I usually go smaller)
Kosher Salt
Black Pepper
1 Spanish Onion, cut into 1-inch dice
2 cloves garlic, minced
2 Red Bell Peppers cut into 1-inch dice
3 Jalapeno Peppers, seeded and minced
2 Tbsp Light Brown Sugar
2 Tbsp Chili Powder
2 Tbsp Cumin
2 Tsp Cayenne Pepper
3 Tbsp Cilantro, chopped
3 15oz cans Diced Tomatoes with juice
1/2 Cup Honey
1/2 Cup BOURBON
1/2 Cup Prepared Black Coffee
2 15oz Cans Black Beans, drained
2 15oz Cans Kidney Beans, drained ( I usually cut back to 1 can )

Directions

Pour 4 Tbsp Oil into a large stockpot over high heat, season the pork with salt and pepper and brown in batches. Set aside the browned pork.
Pour the remaining Oil into the pot and add the onion, garlic, bell pepper and jalapenos. Season the veggies with the brown sugar, chili powder, cumin, cayenne, salt, pepper and cilantro. Sweat the vegetable mixture about 10 minutes or until the onion is soft. Add the pork back to the pot along with the tomatoes, honey, coffee, and BOURBON. Stir in the beans, bring to a simmer for 2-3 hours.
