Ingredients
•.75 lb bacon, chopped
•1 medium white onion, chopped
•3 garlic cloves, minced
•1 jalapeño pepper, deseeded and chopped
•.75 cup honey
•1 qt apple cider vinegar
•2 qt water or stock
•4 dashes tabasco
•5 lbs collard greens, picked and washed
•salt and pepper to taste
Directions
•Render bacon in stock pot until tender.
•Add onions and garlic and cook until fragrant and translucent.
•Add diced jalapeño and cook for a few moments.
•Add honey and stir.
•Add apple cider and water, bring to a boil.
•Stir in collard greens and reduce to a simmer.
•Cover and simmer 1 hour, check for desired tenderness.
•Continue cooking until desired tenderness is reached.
•Season to taste with salt and pepper.
•Pour into container and chill.
•Can be served cold or simply reheat before serving.
Yield: approximately 1 gal
