Chop up half an onion and cook in 1 tablespoon of EVOO. Heat oil first then add finely chopped Onion and 1/4 teaspoon of sea salt. Cook onion 5 to 8 mins until translucent. Add 2 cloves minced garlic. 1/2 teaspoon of chili powder and 1/4 tsp of ground cumin. Cook that for about 30 seconds. Then add 2 cans of rinsed and drained pinto beans. Add 1/2 cup of water and cook covered for 5 minutes. Reduce heat to low and uncover. With the back of a fork mash at least half the beans until you get desired consistency. Stir often and keep cooking uncovered for 3 minutes. I like to add some cayenne pepper here to taste. Remove from heat and add 2 tablespoons of cilantro and 1 tablespoon of lime juice. Ignore desire to toss dirty diapers in parking lot of The Kroger’s.
