Knock the horns off and run it by a fire and I'll eat it. I even got the wife to enjoy a medium rare steak. I like Filets rare, and sometimes strips if they are a good cut. However, I have been taught by some high end steak houses that a ribeye is best served Medium Rare so that the marbling can render its fat.

Medium Rare is what I order dining out. Closer to Rare is what comes off my grill.
